Bell Pepper Egg Bites
Ingredients
2 slices multigrain bread
1/2 cup (122 g) egg whites
2 whole eggs
2 slices low-fat smoked ham (such as Country Kitchen by Maple Leaf)
1 mini bell pepper
Salt and pepper, to taste
Instructions
Prepare the Bell Peppers and Ham:
Slice the mini bell peppers into rings about 1 inch thick.
Cut the ham into small pieces.
Prepare the Eggs:
In a small bowl, combine the egg whites, whole eggs, and ham pieces.
Season with salt and pepper to taste, then mix well.
Cook the Pepper Rings:
Place four bell pepper rings in a non-stick pan over medium heat.
Cook for 2 minutes, then flip them.
Cook the Eggs:
Pour the egg mixture into the center of each bell pepper ring.
Cover the pan with a lid and cook for about 4 minutes, or until the eggs are cooked to your preference.
Season with additional salt and pepper if desired.
