Bell Pepper Egg Bites

Ingredients

  • 2 slices multigrain bread

  • 1/2 cup (122 g) egg whites

  • 2 whole eggs

  • 2 slices low-fat smoked ham (such as Country Kitchen by Maple Leaf)

  • 1 mini bell pepper

  • Salt and pepper, to taste

Instructions

  1. Prepare the Bell Peppers and Ham:

    • Slice the mini bell peppers into rings about 1 inch thick.

    • Cut the ham into small pieces.

  2. Prepare the Eggs:

    • In a small bowl, combine the egg whites, whole eggs, and ham pieces.

    • Season with salt and pepper to taste, then mix well.

  3. Cook the Pepper Rings:

    • Place four bell pepper rings in a non-stick pan over medium heat.

    • Cook for 2 minutes, then flip them.

  4. Cook the Eggs:

    • Pour the egg mixture into the center of each bell pepper ring.

    • Cover the pan with a lid and cook for about 4 minutes, or until the eggs are cooked to your preference.

    • Season with additional salt and pepper if desired.

  5. Serve:

    • Serve the bell pepper egg bites with toasted multigrain bread.
