Avocado & Egg Sandwich

Ingredients

  • 1 large egg

  • 3 tbsp egg whites

  • 1 tsp garlic powder

  • Salt to taste

  • ⅙ fiesta cheese blend

  • ½ medium avocado

  • 1 slice Dave’s Killer Whole Wheat bread cut in halves

Instructions

  • Prepare the Egg Mixture

  • In a bowl, whisk together one large egg, three tablespoons of egg whites, and a teaspoon of garlic powder until well combined.

  • Toast the Bread: 

  • Place a slice of Dave’s Killer Whole Wheat bread in the toaster and toast it to your liking. Once toasted, slice it in half for the sandwich assembly.

  • Cook the Eggs: 

  • Heat a non-stick skillet over medium heat. Pour the egg mixture into the skillet, and cook, stirring occasionally, until the eggs are fully cooked and fluffy. Remove from heat.

  • Assemble the Sandwich:

    • Avocado Layer: Take one half of the toasted bread and spread half of a medium avocado evenly over the surface.

    • Cheese Layer: On the other half of the toasted bread, sprinkle ⅙ of a fiesta cheese blend evenly.

  • Combine: Carefully place the hot, cooked eggs on top of the half with the cheese, allowing the heat from the eggs to slightly melt the cheese.

  • Season: Sprinkle a pinch of salt over the eggs to taste.

  • Enjoy: Bring the two halves together, if desired, or enjoy your open-faced sandwich with all the delicious layers exposed
