Ingredients
2 large eggs
2 egg whites
1/4 cup diced onion
1/4 cup diced green bell pepper
1/4 cup diced ham
1/4 cup shredded cheddar cheese (optional for added flavor)
Salt and pepper, to taste
1 tablespoon olive oil or butter for cooking
Instructions
Prepare Ingredients: Dice the onion, bell pepper, and ham into small pieces. If using cheese, grate it in preparation.
Beat Eggs: In a bowl, whisk together the two whole eggs and two egg whites until fully blended. Season with salt and pepper to taste.
Cook Vegetables and Ham: Heat olive oil or butter in a non-stick skillet over medium heat. Add the diced onion and green bell pepper. Sauté for about 3 minutes until they begin to soften. Add the diced ham and cook for an additional 2 minutes until the vegetables are tender and the ham is lightly browned.
Add Eggs: Pour the beaten eggs over the cooked vegetables and ham in the skillet. Tilt the pan to ensure the eggs are evenly distributed.
Cook the Omelette: Allow the eggs to cook undisturbed for about 2-3 minutes until the edges begin to set. Using a spatula, gently lift the edges of the omelet while tilting the pan to let the uncooked eggs flow to the edges.
Add Cheese: Sprinkle the shredded cheese over half of the omelet. Continue cooking for another 1-2 minutes until the cheese begins to melt and the eggs are set but still slightly runny on top.
Fold and Serve: Carefully fold the omelet in half over the cheese. Slide onto a plate and serve hot.
