Turkey Breakfast Bake

Ingredients

  • 1 tablespoon coconut oil, plus more for greasing the dish

  • 1 lb ground turkey

  • 1/2 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 12 large eggs

  • 1 small sweet potato, peeled and thinly sliced

  • 1 cup baby spinach

  • 1 cup grated cheese (cheddar, mozzarella, or a blend works well)

Instructions

  1. Preheat and Prepare Dish: Preheat the oven to 375℉ (190℃). Grease a 9x9 baking dish with coconut oil and set aside.

  2. Prepare Sweet Potatoes: Peel the sweet potato and slice it into thin 1/4-inch slices. Arrange these slices in a single layer at the bottom of the greased baking dish, allowing some overlap.

  3. Cook Ground Turkey: Heat 1 tablespoon of coconut oil in a medium-sized skillet over medium heat. Add the ground turkey to the skillet. Season with a little more paprika and garlic powder if desired. Break the turkey apart with a spatula and cook until it is thoroughly browned, about 3 to 5 minutes. Drain any excess grease and then evenly distribute the cooked turkey over the sweet potato layer in the baking dish.

  4. Prepare Egg Mixture: In a large mixing bowl, whisk the eggs until smooth. Stir in the paprika, garlic powder, and optionally, additional salt and pepper to taste.

  5. Layer Cheese: Before pouring the egg mixture over the turkey, sprinkle half of the grated cheese over the turkey layer.

  6. Add Egg Mixture: Pour the whisked egg mixture over the cheese and turkey layers in the baking dish.

  7. Bake the Casserole: Place the baking dish in the oven and bake for 30 minutes. Carefully pull the dish out slightly (without fully removing it from the oven) and evenly distribute the baby spinach and the remaining half of the cheese over the top. Return the dish to the oven and continue baking for an additional 5 to 15 minutes, or until the center of the casserole is firm and the cheese is melted and slightly golden. The total cooking time will be approximately 40 to 45 minutes.
