Air Fryer Sweet Chili Chicken and Brussels Sprouts

Ingredients

For the Brussels Sprouts:

  • 12 oz Brussels sprouts, stemmed and halved

  • 1 tbsp olive oil (16g)

  • 1 tsp kosher salt

  • 1 tsp black pepper

For the Chili Chicken:

  • 1 lb boneless, skinless chicken breast, diced

  • 1 tbsp chili oil (16g) (see notes for substitution)

  • 2 tsp ground ginger

  • 1 tsp garlic powder

  • 1 tsp chili powder

  • 1/2 tsp kosher salt

  • 1/4 cup sweet chili sauce (60g), plus more for serving

Instructions

  1. Prep the Brussels Sprouts: Trim the stems and halve the Brussels sprouts. Toss them in olive oil, salt, and pepper until evenly coated.

  2. Air Fry the Brussels Sprouts: Place the Brussels sprouts in the air fryer basket. Cook at 400ºF (200ºC) for 10 minutes, shaking the basket halfway through for even cooking.

  3. Season the Chicken: While the Brussels sprouts are cooking, mix the diced chicken breast with chili oil, ground ginger, garlic powder, chili powder, and salt until well coated.

  4. Combine Chicken and Brussels Sprouts: After the Brussels sprouts have cooked for 10 minutes, add the seasoned chicken to the air fryer basket. Gently stir to combine with the Brussels sprouts.

  5. Air Fry Chicken and Brussels Sprouts: Continue air frying at 400ºF (200ºC) for an additional 10-12 minutes. Stir halfway through to ensure even crisping. Cook until the chicken reaches an internal temperature of 160ºF to 165ºF (71ºC to 74ºC).

  6. Add Sweet Chili Sauce: Once the chicken is cooked, add 1/4 cup of sweet chili sauce to the basket. Stir to coat everything. Air fry or broil for an additional 1-2 minutes to caramelize the sauce.

  7. Serve: Serve hot with rice, sprinkled with toasted sesame seeds, lime wedges, and additional sweet chili sauce if desired.

Notes

  • Frozen Brussels Sprouts: For frozen sprouts, microwave a 12-ounce bag for 2 minutes before draining and cutting in half. Follow the recipe as directed.

  • Chili Oil Substitute: If chili oil is unavailable, use olive oil with 1/2 to 1 tsp crushed red pepper or chili flakes for added spice.

  • Stovetop Instructions: Toss Brussels sprouts in olive oil, salt, and pepper. Place cut-side down in a large skillet over medium-high heat. Cook until charred and crispy, then set aside. Add chicken to the skillet and cook for 6-8 minutes until done. Combine with Brussels sprouts and sweet chili sauce, cook for 1-2 minutes more.

  • Oven Instructions: Toss Brussels sprouts in olive oil, salt, and pepper. Place cut-side down on a baking sheet and bake at 400ºF (200ºC) for 15 minutes. Add chicken, stir, and bake for another 15-20 minutes until the chicken is fully cooked. Stir in sweet chili sauce and bake for an additional 1-2 minutes.
