Mexican Pizza

Ingredients
4 tortillas (corn or whole wheat)
1 cup cooked seasoned ground beef or chicken
½ cup refried beans
½ cup salsa
1 cup shredded Mexican blend cheese
¼ cup chopped tomatoes
¼ cup chopped green onions
¼ cup chopped black olives
2 tbsp chopped fresh cilantro
Sour cream, for garnish
Guacamole, for garnish
Instructions
Preheat Oven: Preheat the oven to 400°F (200°C). Line a baking pan with parchment paper.
Prepare Tortillas: Place two tortillas on the baking sheet. Spread a thin layer of refried beans on each tortilla, leaving a small border around the edges.
Add Meat: Spread a layer of cooked ground beef or chicken on top of the refried beans.
Add Salsa: Spoon salsa over the meat layer in an even layer.
Add Cheese: Sprinkle shredded cheese on top.
Top with Tortillas: Place the remaining two tortillas on top of the cheese, creating a sandwich-like structure.
Bake: Bake the pizzas in the preheated oven for 10 to 12 minutes, until the cheese is melted and the tortillas are crispy.
Cool and Slice: Remove the pizzas from the oven and let them cool for a few minutes. Slice each pizza into quarters.
Add Toppings: Top with chopped tomatoes, green onions, black olives, and cilantro if desired.
Serve: Serve hot Mexican pizzas with sour cream and guacamole!
Notes
We suggest using whole wheat or corn tortillas, either store-bought or homemade.
Feel free to use another ground meat or omit the meat for a vegetarian option.
Bake the pizzas until the cheese is melted and the top tortilla is lightly golden brown.
Store leftovers in the fridge for up to 4 days.
