High Protein Chicken Pepper Jack Crunch Wrap

Ingredients

  • 1 whole Joseph’s Lavash wrap (find online or at select Walmarts)

  • 1/2 cup pulled rotisserie chicken breast (100g), or any leftover grilled or shredded chicken

  • 1 slice reduced-fat pepper jack cheese (e.g., Sargento)

  • 1/4 small avocado (20g), sliced

  • 2 tbsp fresh cilantro, chopped

  • 1/2 large tomato, sliced (50g)

  • 1 tbsp red onion, thinly sliced (15g)

  • 1/4 cup arugula

  • 1 tbsp cilantro avocado dressing (15g) (optional: use Bolthouse or similar)

Instructions

  1. Assemble the Wrap: Lay the Lavash wrap flat and place the pepper jack cheese in the center. Layer with pulled chicken, avocado, tomato slices, cilantro, red onion, and arugula. Drizzle with cilantro avocado dressing if using.

  2. Fold the Wrap: Fold the left side of the wrap over the filling, then fold the top and bottom sides in, followed by the right side, forming a pentagon shape. Don't worry if it's not perfect.

  3. Grill the Wrap: Spray a hot pan with cooking spray and place the wrap seam-side down. Cook for 1-2 minutes until the bottom is golden and sealed. Spray the top with cooking spray, flip, and cook the other side until browned and the cheese is melted.

  4. Serve: Serve hot, with extra cilantro avocado dressing or salsa for dipping if desired.

Notes

  • Wrap Selection: Joseph’s Lavash wraps have excellent macros, with only 16 carbs, 3g fat, and 12g protein per large wrap. If you can’t find this brand, look for similar low-carb options.

  • Variations: Feel free to add other veggies or switch up the cheese for different flavors.
