Banana Protein Muffins

Ingredients
2 cups oats (quick or rolled)
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vanilla protein powder
1 cup mashed bananas (from about 2 large overripe bananas)
1 cup plain 0% Greek yogurt
2 eggs
1 teaspoon vanilla extract
2/3 cup mini dark chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Prepare a 12-cup muffin tin with non-stick spray or line with silicone muffin liners.
Process the oats in a food processor until finely ground.
Combine the ground oats with the baking powder, baking soda, salt, protein powder, bananas, Greek yogurt, eggs, and vanilla extract in the food processor. Blend until smooth and well mixed.
Fold in the chocolate chips, reserving a few for topping if desired.
Distribute the batter evenly into the muffin cups.
Bake for 20-22 minutes, until a toothpick inserted into the center comes out clean and the tops are lightly golden and firm to the touch.
Cool the muffins completely before removing them from the tin.
Notes
Sweetness: These muffins are naturally sweetened with bananas and the protein powder. For a sweeter taste, add 2 tablespoons of honey or pure maple syrup.
Bananas: Use very ripe, spotty bananas for the best flavor and natural sweetness.
Protein Powder: Whey protein powder works well, but you can substitute with a vanilla vegan protein powder if preferred.
Liners: Silicone muffin liners are recommended as paper liners may stick due to the moisture content of the muffins.
