Chocolate Protein Muffins

Ingredients:

  • 3/4 cup oats

  • 3 ripe bananas

  • 2 eggs

  • 2 tbsp maple syrup

  • 2 scoops chocolate protein powder

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp cinnamon

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C).

  2. Prepare the Muffin Tin:

    • Line a muffin tin with cupcake liners or lightly grease the tin.

  3. Make Oat Flour:

    • Process the oats in a blender or food processor until they are finely ground into oat flour.

  4. Blend Ingredients:

    • Add the bananas, eggs, maple syrup, chocolate protein powder, baking powder, baking soda, and cinnamon to the blender or food processor with the oat flour. Blend until the mixture is smooth and well combined.

  5. Fill the Muffin Tin:

    • Evenly distribute the batter across the 12 muffin cups.

  6. Bake:

    • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  7. Cool:

    • Let the muffins cool in the tin for a few minutes, then transfer them to a cooling rack to cool completely for about 15 minutes.

Notes:

  • Recipe makes 12 muffins (1 serving = 1 muffin).
