Egg Tacos

Ingredients:

  • 2 whole eggs

  • 2 servings of egg whites

  • 4 Carb Smart Tortillas (45 calorie version)

  • ⅔ cup fiesta blend cheese

  • 4 tbsp sour cream

  • 4 tbsp salsa

  • 1 tsp garlic powder

  • Salt, to taste

Instructions:

  • Prepare the Egg Mixture:

    • In a mixing bowl, whisk together the whole eggs and egg whites with garlic powder and a pinch of salt until well combined and slightly frothy.

  • Cook the Eggs:

    • Heat a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are softly scrambled and fully cooked. Remove from heat.

  • Warm the Tortillas:

    • In another skillet or on a griddle over medium heat, warm the tortillas for about 60-90 seconds on each side, or until they are pliable and slightly charred. Keep them warm by wrapping in a clean kitchen towel.

  • Assemble the Tacos:

    • Divide the scrambled eggs evenly among the warmed tortillas, placing a portion of eggs in the center of each tortilla.

    • Sprinkle each with an equal amount of fiesta blend cheese. The warmth from the eggs will help melt the cheese.

    • Add a tablespoon of sour cream and a tablespoon of salsa on top of the cheese for each taco.

  • Serve and Enjoy:
