Egg Tacos
Ingredients:
2 whole eggs
2 servings of egg whites
4 Carb Smart Tortillas (45 calorie version)
⅔ cup fiesta blend cheese
4 tbsp sour cream
4 tbsp salsa
1 tsp garlic powder
Salt, to taste
Instructions:
Prepare the Egg Mixture:
In a mixing bowl, whisk together the whole eggs and egg whites with garlic powder and a pinch of salt until well combined and slightly frothy.
Cook the Eggs:
Heat a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are softly scrambled and fully cooked. Remove from heat.
Warm the Tortillas:
In another skillet or on a griddle over medium heat, warm the tortillas for about 60-90 seconds on each side, or until they are pliable and slightly charred. Keep them warm by wrapping in a clean kitchen towel.
Assemble the Tacos:
Divide the scrambled eggs evenly among the warmed tortillas, placing a portion of eggs in the center of each tortilla.
Sprinkle each with an equal amount of fiesta blend cheese. The warmth from the eggs will help melt the cheese.
Add a tablespoon of sour cream and a tablespoon of salsa on top of the cheese for each taco.
