Spinach and Feta Egg Muffin

Ingredients:

  • 4 large eggs

  • 1/2 cup chopped spinach

  • 1/4 cup crumbled feta cheese

  • 1/4 cup diced cherry tomatoes

  • 1/4 cup diced onions

  • Salt and pepper to taste

  • Non-stick cooking spray

Instructions:

  • Preheat Oven: Set the oven to 350°F (175°C).

  • Prepare the Muffin Tin: Spray a muffin tin with non-stick cooking spray.

  • Combine Ingredients: In a bowl, whisk the eggs. Add the spinach, feta, tomatoes, and onions. Season with salt and pepper and stir to combine.

  • Fill Muffin Cups: Pour the egg mixture into the muffin cups, filling them about 3/4 full.

  • Bake: Place in the oven and bake for 20-25 minutes, or until the tops are firm to the touch and eggs are cooked.

  • Serve or Store: Serve warm, or let them cool and store in the refrigerator for an easy grab-and-go option during the week.
