Spinach and Feta Egg Muffin
Ingredients:
4 large eggs
1/2 cup chopped spinach
1/4 cup crumbled feta cheese
1/4 cup diced cherry tomatoes
1/4 cup diced onions
Salt and pepper to taste
Non-stick cooking spray
Instructions:
Preheat Oven: Set the oven to 350°F (175°C).
Prepare the Muffin Tin: Spray a muffin tin with non-stick cooking spray.
Combine Ingredients: In a bowl, whisk the eggs. Add the spinach, feta, tomatoes, and onions. Season with salt and pepper and stir to combine.

Bake: Place in the oven and bake for 20-25 minutes, or until the tops are firm to the touch and eggs are cooked.
