Baked Chicken Legs

Ingredients

  • 8 chicken drumsticks (about 2 lb)

  • 2 Tbsp olive oil

Seasonings

  • 1 tsp sea salt

  • ½ tsp ground black pepper

  • 1 tsp garlic powder

  • 1 ½ tsp smoked paprika

  • ¼ tsp chili powder

  • 1 tsp onion powder

Instructions

  1. Preheat Oven: Preheat the oven to 425°F (220°C).

  2. Prepare Baking Sheet: Line a baking sheet with aluminum foil and lightly spray with non-stick cooking oil. Set aside.

  3. Prepare Chicken: Remove drumsticks from packaging and pat dry with paper towels. Place in a bowl or resealable plastic bag. Add olive oil and toss to coat.

  4. Season Chicken: In a small bowl, combine all the seasonings. Add to the bowl/bag with the chicken and toss until the drumsticks are evenly coated.

  5. Bake Chicken: Place the drumsticks on the prepared baking sheet. Bake in the preheated oven for 40-45 minutes, or until the internal temperature reaches 165°F (75°C) or higher.

  6. Serve: Let the chicken rest for a few minutes before serving. Enjoy!

Notes

  • Internal Temperature: While the safe internal temperature is 165°F, cooking the drumsticks a bit longer ensures no bloody spots around the bones, resulting in fall-off-the-bone tender and juicy chicken.

  • Storage: Cooked chicken lasts up to four days in the refrigerator. Reheat for warm meals, though the skin won't be as crispy. The meat can also be pulled off the bone for easy sandwiches and salads. It’s delicious both cold and warm!
