Baked Salmon with Asparagus

Ingredients

  • 1 pound (450g) salmon fillets

  • 1 lb (450g) medium-thick asparagus, woody ends trimmed

  • 2 tablespoons vegetable or chicken broth

  • 1 1/2 tablespoon fresh lemon juice, plus more for serving

  • 1 tablespoon hot sauce (e.g., Sriracha)

  • 4 teaspoons minced garlic (about 4 cloves)

  • 3-4 tablespoons butter, diced into small cubes

  • 2 tablespoons chopped fresh parsley or cilantro

  • Salt and fresh ground black pepper, to taste

Instructions

  1. Preheat Oven and Prepare Foil: Preheat your oven to 425ºF (220ºC). Cut two sheets of heavy-duty aluminum foil, each about 14 by 12 inches.

  2. Season Ingredients: In a small bowl, mix broth, lemon juice, and hot sauce. Season salmon fillets on both sides with salt and pepper. Place each fillet in the center of a foil sheet and arrange asparagus alongside.

  3. Add Seasonings and Butter: Sprinkle minced garlic over salmon and asparagus. Drizzle the broth mixture over the top. Evenly distribute butter cubes on the salmon and asparagus.

  4. Wrap Foil Packets: Fold the foil over the salmon and asparagus, crimping edges to seal while leaving space inside for heat circulation. Place packets on a baking sheet, sealed side up.

  5. Bake: Cook in the preheated oven for about 9-12 minutes, or until salmon is cooked through.

  6. Serve: Carefully open the foil packets, drizzle with additional lemon juice, and garnish with fresh parsley or cilantro and a lemon slice.
