Coconut Lime Chicken

Ingredients
2 lbs boneless skinless chicken breasts (about 4 chicken breasts)
¼ cup all-purpose flour
¼ cup chopped cilantro, plus more for garnish
2 tablespoons coconut oil
1 tablespoon olive oil
1 garlic clove, minced
1 cup coconut milk
⅔ cup chicken broth
1 tablespoon brown sugar (or substitute with coconut sugar)
2 limes, juiced (divided)
1 green onion, chopped, for garnish
Salt and pepper, to taste
1 cup white rice (to serve as a base)
Instructions
Preheat Oven and Prepare Rice:
Preheat your oven to 375°F (190°C).
Rinse 1 cup of white rice under cold water until the water runs clear. Cook according to package instructions.
Prepare Chicken:
Heat a large, oven-safe skillet or Dutch oven over medium heat. Add the coconut oil and olive oil.
In a bowl, combine the flour and chopped cilantro. Season the chicken breasts with salt and pepper, then dip each into the flour mixture until well-coated.
Place the coated chicken in the hot skillet. Sear for 3-4 minutes per side until golden brown.
Add Garlic and Liquids:
Once the chicken is browned, reduce heat slightly and add the minced garlic to the skillet. Cook for about 30 seconds until fragrant.
In a separate bowl, whisk together coconut milk, chicken broth, brown sugar, and juice from one lime. Pour this mixture over the chicken in the skillet.
Bake:
Transfer the skillet to the preheated oven. Bake for 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Final Touches:
Remove the skillet from the oven. Squeeze the juice from the remaining lime over the chicken.
Season with additional salt and pepper to taste. Garnish with extra chopped cilantro and chopped green onions.
Serve:
Spoon the cooked rice onto plates. Top with a chicken breast and spoon over some of the coconut lime sauce from the pan. Serve immediately.
