Coconut Lime Chicken

Ingredients

  • 2 lbs boneless skinless chicken breasts (about 4 chicken breasts)

  • ¼ cup all-purpose flour

  • ¼ cup chopped cilantro, plus more for garnish

  • 2 tablespoons coconut oil

  • 1 tablespoon olive oil

  • 1 garlic clove, minced

  • 1 cup coconut milk

  • ⅔ cup chicken broth

  • 1 tablespoon brown sugar (or substitute with coconut sugar)

  • 2 limes, juiced (divided)

  • 1 green onion, chopped, for garnish

  • Salt and pepper, to taste

  • 1 cup white rice (to serve as a base)

Instructions

  1. Preheat Oven and Prepare Rice:

    • Preheat your oven to 375°F (190°C).

    • Rinse 1 cup of white rice under cold water until the water runs clear. Cook according to package instructions.

  2. Prepare Chicken:

    • Heat a large, oven-safe skillet or Dutch oven over medium heat. Add the coconut oil and olive oil.

    • In a bowl, combine the flour and chopped cilantro. Season the chicken breasts with salt and pepper, then dip each into the flour mixture until well-coated.

    • Place the coated chicken in the hot skillet. Sear for 3-4 minutes per side until golden brown.

  3. Add Garlic and Liquids:

    • Once the chicken is browned, reduce heat slightly and add the minced garlic to the skillet. Cook for about 30 seconds until fragrant.

    • In a separate bowl, whisk together coconut milk, chicken broth, brown sugar, and juice from one lime. Pour this mixture over the chicken in the skillet.

  4. Bake:

    • Transfer the skillet to the preheated oven. Bake for 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

  5. Final Touches:

    • Remove the skillet from the oven. Squeeze the juice from the remaining lime over the chicken.

    • Season with additional salt and pepper to taste. Garnish with extra chopped cilantro and chopped green onions.

  6. Serve:

    • Spoon the cooked rice onto plates. Top with a chicken breast and spoon over some of the coconut lime sauce from the pan. Serve immediately.
