Balsamic Pork Chops with Garlic Green Beans

Ingredients

Balsamic Pork Chops:

  • 4 thick-cut pork chops

  • 1 teaspoon Italian seasoning

  • ½ teaspoon salt

  • ½ teaspoon pepper

  • 1 tablespoon butter

  • 1 tablespoon olive oil

  • 2 cloves garlic, finely minced

  • ½ cup balsamic vinegar

  • ½ cup chicken stock

  • ¼ cup brown sugar

  • 1 tablespoon cornstarch

  • 1 tablespoon cold water

  • Minced parsley, for garnish

Garlic Green Beans:

  • 1 pound fresh green beans, trimmed

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 tablespoon lemon juice

  • 1 tablespoon grated parmesan cheese (optional)

Instructions

Balsamic Pork Chops:

  1. Season the Pork Chops: Dry the pork chops with paper towels, then season both sides evenly with Italian seasoning, salt, and pepper.

  2. Sear the Pork Chops: Heat the butter and olive oil in a large pan over medium-high heat. Add the pork chops and sear until golden on both sides, about 8-10 minutes total. If your chops have a fat cap on one side, brown this too. Remove the pork chops from the pan and place them on a plate.

  3. Prepare the Sauce: Remove all but 1 tablespoon of fat from the pan. Add the garlic and cook for 30 seconds until fragrant. Add the balsamic vinegar, chicken stock, and brown sugar to the pan, and bring to a boil for two minutes, scraping the bottom of the pan to remove any stuck-on bits.

  4. Cook the Pork Chops: Return the pork chops and any juices on the plate to the pan. Reduce the heat to medium-low, cover the pan, and continue to cook until the pork chops reach an internal temperature of 145°F (63°C), about five minutes.

  5. Thicken the Sauce: Remove the pork chops from the pan. In a small bowl, mix the cornstarch and cold water, then pour it into the pan. Stir for 30 seconds until the sauce thickens. Return the pork chops to the pan and coat them with the sauce.

  6. Serve: Serve the pork chops with the balsamic sauce spooned over the top, garnished with minced parsley.

Garlic Green Beans:

  1. Cook the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and cook for 4-5 minutes until tender-crisp. Drain and set aside.

  2. Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  3. Combine and Season: Add the cooked green beans to the skillet and toss to coat in the garlic oil. Season with salt and black pepper. Cook for another 2-3 minutes until the green beans are tender.

  4. Finish with Lemon and Parmesan: Remove from heat and drizzle with lemon juice. Sprinkle with grated parmesan cheese if desired and toss to combine.

  5. Serve: Plate the garlic green beans alongside the balsamic pork chops for a complete and delicious meal.
