Ingredients:

  • 1 lb ground beef (lean, for a healthier option)

  • 2 medium potatoes

  • 4 tbsp sour cream

  • ΒΌ cup almond milk (unsweetened)

  • 4 tsp garlic powder (divided)

  • 1 tsp onion powder

  • β…” cup fiesta blend shredded cheese

  • Salt, to taste

Directions:

  • Prep the Potatoes:

    • Peel the potatoes and cut them into 1-inch cubes to ensure even cooking.

    • Bring 6 cups of water to a rolling boil in a large pot. Carefully add the cubed potatoes to the boiling water.

    • Set a timer for 20 minutes, or until the potatoes are tender and can be easily pierced with a fork.

  • Cook the Ground Beef:

    • While the potatoes are boiling, heat a large skillet over medium heat.

    • Add the ground beef to the skillet, breaking it apart with a spoon. Stir in the onion powder and half of the garlic powder (2 tsp).

    • Cook the beef until it's no longer pink, about 6-8 minutes. Drain any excess fat if necessary.

  • Mash the Potatoes:

    • Once the potatoes are cooked, drain them well and return them to the pot.

    • Add the sour cream, remaining 2 tsp of garlic powder, almond milk, and salt to taste. Using a potato masher or an electric mixer, mash the potatoes until they are smooth and creamy. Adjust the seasoning as needed.

  • Combine Beef with Mashed Potatoes:

    • Add the cooked ground beef and fiesta blend shredded cheese to the mashed potatoes. Stir everything together until well combined.

  • Serve:

    • Divide the beef and mashed potato mixture evenly into four bowls. If desired, garnish with extra cheese, a sprinkle of paprika, or chopped fresh herbs for added flavor and presentation.
