Chicken Fajitas

Ingredients (4 Servings):

  • 1 pound chicken tenderloins

  • 2 teaspoons garlic seasoning

  • 2 bell peppers (choose different colors for variety, e.g., one red, one green), sliced

  • 1 medium red onion, sliced

  • 4 Mission Carb Smart Tortillas

  • 4 tablespoons Herdez Tomatillo Salsa (1 tablespoon per serving)

  • 1 cup fiesta blend shredded cheese (¼ cup per serving)

  • 4 tablespoons sour cream (1 tablespoon per serving)

Instructions:

  • Prepare the Chicken and Vegetables:

    • Slice the chicken tenderloins into thin strips for even and quick cooking. Season them generously with garlic seasoning.

    • Slice the bell peppers and red onion into strips, aiming for similar thickness to ensure uniform cooking.

  • Cook the Chicken:

    • Heat a large skillet over medium-high heat. Once hot, add the chicken strips in a single layer, avoiding overcrowding the pan. You may need to cook the chicken in batches depending on the size of your skillet.

    • Cook for about 2-3 minutes on one side, then flip the strips to cook through and brown on the other side, another 2-3 minutes. Remove the chicken from the skillet and set aside.

  • Sauté the Vegetables:

    • In the same skillet, add a bit more oil if needed, and then toss in the sliced bell peppers and red onion.

    • Sauté, stirring occasionally, until the vegetables are tender and slightly charred around the edges, about 5-7 minutes. Adjust the heat as necessary to avoid burning.

  • Combine Chicken and Vegetables:

    • Return the cooked chicken to the skillet with the vegetables. Stir to combine and cook together for an additional 1-2 minutes. Remove from heat.

  • Warm the Tortillas:

    • Warm the Mission Carb Smart Tortillas according to package instructions, either in a dry skillet over low heat, in the oven, or in the microwave. Warming makes them more pliable and enhances their flavor.

  • Assemble the Fajitas:

    • Lay out the warm tortillas on plates. Spoon a generous portion of the chicken and vegetable mixture onto each tortilla.

    • Top each with a spoonful of Herdez Tomatillo Salsa, a sprinkle of fiesta blend shredded cheese, and a dollop of sour cream to taste.

  • Serve:

    • Serve the chicken fajitas immediately while everything is still warm. You can garnish with extra toppings like chopped cilantro, lime wedges, or avocado slices if desired.

Enjoy your homemade chicken fajitas, a delightful mix of tender chicken, sautéed vegetables, and vibrant flavors wrapped in a low-carb tortilla for a healthier twist. This dish is perfect for a quick weeknight dinner or a casual dining experience with friends and family.
