Grilled Steak with Mashed Sweet Potatoes
Ingredients
For the Grilled Steak:
4 (6-ounce) steaks (e.g., ribeye, sirloin, or filet mignon)
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon fresh rosemary, chopped
1 teaspoon fresh thyme, chopped
Salt and pepper to taste
For the Mashed Sweet Potatoes:
2 large sweet potatoes, peeled and cubed
1/4 cup milk (or more, as needed)
2 tablespoons butter
Salt and pepper to taste
1/4 teaspoon ground cinnamon (optional)
1/4 teaspoon ground nutmeg (optional)
Instructions
Prepare the Steak Marinade:
In a small bowl, combine the olive oil, minced garlic, chopped rosemary, and chopped thyme.
Rub the mixture evenly over the steaks and season generously with salt and pepper.
Let the steaks marinate at room temperature for 15-30 minutes.
Grill the Steaks:
Preheat the grill to medium-high heat.
Grill the steaks for about 4-5 minutes per side for medium-rare, or to your desired doneness.
Remove the steaks from the grill and let them rest for 5-10 minutes before serving.
Prepare the Mashed Sweet Potatoes:
While the steaks are marinating, place the cubed sweet potatoes in a large pot and cover with water.
Bring to a boil over high heat, then reduce the heat and simmer for about 15 minutes, or until the sweet potatoes are tender.
Drain the sweet potatoes and return them to the pot.
Add the milk, butter, salt, pepper, cinnamon, and nutmeg (if using). Mash until smooth, adding more milk if needed to reach the desired consistency.
Serve:
Plate the grilled steaks alongside a generous serving of mashed sweet potatoes.
Garnish with additional rosemary or thyme if desired.
