Thai Chicken Lettuce Wraps

Ingredients:
For the Filling:
1 tbsp sesame oil
1 lb ground chicken
1 yellow onion, diced
1 red bell pepper, diced
1/2 cup shredded carrots
4 cloves garlic, minced
3/4 cup peanut sauce (store-bought or homemade)
For Serving:
1 head romaine lettuce
1/2 cup chopped cashews or peanuts (optional)
1 tbsp sesame seeds (optional)
Sliced green onions
Instructions:
Cook the Chicken:
Heat the sesame oil in a large skillet over medium heat. Add the ground chicken and cook until browned, crumbling as it cooks.
Add Vegetables:
Add the diced onion, red bell pepper, shredded carrots, and minced garlic to the skillet. Sauté for 3-4 minutes until the vegetables are softened.
Add Peanut Sauce:
Stir in the peanut sauce and cook for another minute until the mixture is warm and everything is well coated.
Assemble the Wraps:
Spoon the chicken and vegetable filling into the lettuce leaves. Top with chopped cashews or peanuts, sesame seeds, and sliced green onions.
Serve:
Serve immediately and enjoy!
Notes:
Store-bought peanut sauce works well in place of homemade peanut sauce.
