Thai Chicken Lettuce Wraps

Ingredients:

For the Filling:

  • 1 tbsp sesame oil

  • 1 lb ground chicken

  • 1 yellow onion, diced

  • 1 red bell pepper, diced

  • 1/2 cup shredded carrots

  • 4 cloves garlic, minced

  • 3/4 cup peanut sauce (store-bought or homemade)

For Serving:

  • 1 head romaine lettuce

  • 1/2 cup chopped cashews or peanuts (optional)

  • 1 tbsp sesame seeds (optional)

  • Sliced green onions

Instructions:

  1. Cook the Chicken:

    • Heat the sesame oil in a large skillet over medium heat. Add the ground chicken and cook until browned, crumbling as it cooks.

  2. Add Vegetables:

    • Add the diced onion, red bell pepper, shredded carrots, and minced garlic to the skillet. Sauté for 3-4 minutes until the vegetables are softened.

  3. Add Peanut Sauce:

    • Stir in the peanut sauce and cook for another minute until the mixture is warm and everything is well coated.

  4. Assemble the Wraps:

    • Spoon the chicken and vegetable filling into the lettuce leaves. Top with chopped cashews or peanuts, sesame seeds, and sliced green onions.

  5. Serve:

    • Serve immediately and enjoy!

Notes:

  • Store-bought peanut sauce works well in place of homemade peanut sauce.
