Lemon Garlic Tilapia with Asparagus

Ingredients:

  • 2 tilapia fillets (6 oz each)

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • Juice of 1 lemon, plus lemon slices for garnish

  • 1 bunch asparagus, ends trimmed

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)

Instructions:

  • Preheat the Oven: Set your oven to 400°F (200°C).

  • Prepare the Asparagus: Place the asparagus in a single layer on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss to coat.

  • Season the Tilapia: In a small bowl, mix the remaining olive oil, garlic, and lemon juice. Lay the tilapia fillets on a separate baking sheet and pour the garlic-lemon mixture over them. Season with salt and pepper.

  • Bake: Place both the asparagus and tilapia in the oven. Bake the asparagus for 15-20 minutes and the tilapia for 10-12 minutes, or until fish flakes easily with a fork.

  • Serve: Garnish the tilapia with fresh parsley and lemon slices. Serve the asparagus on the side.
