Chicken Fajita Bowl

Ingredients:

  • 2 chicken breasts (6 oz each)

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 medium onion, sliced

  • 1 tablespoon olive oil

  • 2 teaspoons fajita seasoning

  • 1 cup cooked brown rice

  • Fresh cilantro, chopped (for garnish)

  • Lime wedges (for serving)

Instructions:

  • Prepare Ingredients: Slice chicken, bell peppers, and onion.

  • Season Chicken: Toss chicken slices with fajita seasoning.

  • Cook Vegetables: Heat half the olive oil in a large skillet over medium-high heat. Add the bell peppers and onion, sautéing until softened, about 5-6 minutes. Remove from the skillet and set aside.

  • Cook Chicken: In the same skillet, add the remaining oil and the seasoned chicken. Cook until chicken is golden and cooked through, about 5-6 minutes.

  • Combine: Return the vegetables to the skillet with the chicken and mix well.

  • Serve: Spoon the chicken and vegetable mixture over cooked brown rice. Garnish with cilantro and serve with lime wedges on the side.
