Shrimp and Zoodles

Ingredients:

  • 1 lb shrimp, peeled and deveined

  • 4 medium zucchinis, spiralized

  • 1 pint cherry tomatoes, halved

  • 2 cloves garlic, minced

  • 1 lemon, zest and juice

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh basil leaves, for garnish

Instructions:

  • Prepare Shrimp: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add shrimp, season with salt and pepper, and cook until shrimp are pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.

  • Cook Garlic: Add the remaining olive oil and minced garlic to the skillet. Sauté for about 30 seconds until fragrant.

  • Add Zucchini Noodles: Add spiralized zucchini noodles to the skillet. Cook for about 2-3 minutes until just tender. Be careful not to overcook to avoid soggy noodles.

  • Combine Ingredients: Return the shrimp to the skillet along with the halved cherry tomatoes. Toss everything together to heat through.

  • Season: Add lemon zest and juice, then season with additional salt and pepper to taste.

  • Garnish and Serve: Transfer to plates or a serving dish and garnish with fresh basil leaves.
