Lemon Chicken with Veggies

Ingredients

Lemon Chicken

  • 1 lb chicken breast

  • 1/4 cup chicken stock

  • 1 tbsp freshly squeezed lemon juice

  • 2 tbsp olive oil

  • 1 white onion

  • 3 cloves garlic

  • ½ tsp salt

  • ½ tsp black pepper

Baked Veggies

  • 2 sweet potatoes, peeled and diced

  • 2 cups broccoli florets

  • 2 tbsp extra virgin olive oil

  • ½ tsp paprika

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¼ tsp garlic powder

  • Pinch of black pepper

Fresh Veggies

  • 3 cups cherry tomatoes

  • Fresh dill, chopped

Instructions

  1. Prepare the Marinade: Chop the onion into chunky pieces and peel the garlic cloves. Add them to a blender along with the chicken stock, lemon juice, 1 tbsp of olive oil, salt, and pepper. Blend until smooth.

  2. Marinate the Chicken: Cut the chicken breasts into 1-inch chunks and combine them with the marinade in a large bowl or Ziploc bag. Refrigerate for at least 2 hours.

  3. Preheat the Oven: Preheat the oven to 425°F (220°C).

  4. Prepare the Sweet Potatoes: In a bowl, mix 1 tbsp of olive oil with paprika, salt, ¼ tsp black pepper, and garlic powder. Peel and dice the sweet potatoes into ½-inch cubes and coat them with the mixture. Spread them on a baking sheet and bake for 35 minutes.

  5. Add Broccoli: After 10 minutes, add the broccoli to the baking sheet, drizzle with 1 tbsp of olive oil, and season with a pinch of black pepper. Bake for the remaining 25 minutes.

  6. Cook the Chicken: While the vegetables are baking, heat 1 tbsp of olive oil in a skillet over medium heat. Add the chicken with the marinade and cook for 13-15 minutes, stirring frequently until the chicken is golden brown.

  7. Prepare Fresh Veggies: Chop the cherry tomatoes and dill. Toss the tomatoes with the chopped dill.

  8. Assemble Meal Prep Bowls: Divide the lemon chicken, baked vegetables, and fresh veggies equally into 3 food containers. Store in the fridge for up to 3 days.
