Beef-Stuffed Zucchini Boats

Ingredients:

  • 4 medium-sized zucchinis

  • 1 pound ground beef

  • 1 tsp garlic powder

  • Salt, to taste

  • 2 cups marinara sauce

  • 1 cup shredded mozzarella cheese

Instructions:

  • Prepare Zucchini Boats:

    • Preheat your oven to 400°F (200°C).

    • Cut the zucchinis in half lengthwise. Using a spoon, scoop out the centers of each zucchini half, leaving a shell thick enough to hold the filling. Finely chop the scooped-out zucchini flesh and set it aside.

  • Cook the Filling:

    • Heat a large skillet over medium heat. Add the ground beef, breaking it apart with a spoon.

    • Sprinkle in the garlic powder and a pinch of salt. Cook until the beef starts to brown.

    • Add the finely chopped zucchini flesh to the pan with the ground beef. Continue to sauté until the beef is fully cooked and the zucchini is tender.

    • Stir in the marinara sauce and cook for an additional 2-3 minutes, allowing the flavors to meld.

  • Stuff the Zucchini Boats:

    • Arrange the zucchini halves in a baking dish. Spoon the meat mixture evenly into each zucchini boat.

    • Top each stuffed zucchini with shredded mozzarella cheese.

  • Bake:

    • Bake in the preheated oven for about 15 minutes, or until the cheese is melted and bubbly, and the zucchini boats are tender.

  • Serve:

    • Remove from the oven and let cool for a couple of minutes. Serve warm and enjoy your delicious Beef-Stuffed Zucchini Boats!
