Beef-Stuffed Zucchini Boats
Ingredients:
4 medium-sized zucchinis
1 pound ground beef
1 tsp garlic powder
Salt, to taste
2 cups marinara sauce
1 cup shredded mozzarella cheese
Instructions:
Prepare Zucchini Boats:
Preheat your oven to 400°F (200°C).
Cut the zucchinis in half lengthwise. Using a spoon, scoop out the centers of each zucchini half, leaving a shell thick enough to hold the filling. Finely chop the scooped-out zucchini flesh and set it aside.
Cook the Filling:
Heat a large skillet over medium heat. Add the ground beef, breaking it apart with a spoon.
Sprinkle in the garlic powder and a pinch of salt. Cook until the beef starts to brown.
Add the finely chopped zucchini flesh to the pan with the ground beef. Continue to sauté until the beef is fully cooked and the zucchini is tender.
Stir in the marinara sauce and cook for an additional 2-3 minutes, allowing the flavors to meld.
Stuff the Zucchini Boats:
Arrange the zucchini halves in a baking dish. Spoon the meat mixture evenly into each zucchini boat.
Top each stuffed zucchini with shredded mozzarella cheese.
Bake:
Bake in the preheated oven for about 15 minutes, or until the cheese is melted and bubbly, and the zucchini boats are tender.
Serve:
Remove from the oven and let cool for a couple of minutes. Serve warm and enjoy your delicious Beef-Stuffed Zucchini Boats!
