Ingredients

  • 1 cup cooked boneless skinless chicken breast, chopped or shredded

  • 1/2 cup canned diced tomatoes with green chilies, drained

  • 1/2 cup canned black beans, rinsed and drained

  • 1/2 cup canned corn, rinsed and drained

  • 1/4 cup cilantro, chopped

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp cumin

  • 1/4 tsp oregano

  • 4 smart carb tortillas

  • 1 1/3 cups reduced-fat shredded pepper jack cheese (or substitute with your preferred cheese)

Instructions

  1. Prepare Filling: In a bowl, combine the chicken, diced tomatoes with green chilies, black beans, corn, and cilantro. Season with garlic powder, onion powder, cumin, and oregano. Add salt and pepper to taste; mix well.

  2. Cook Quesadillas: Heat a non-stick skillet over medium-high heat. Place a tortilla in the skillet. Sprinkle about 1.5 tablespoons of cheese on one half of the tortilla. Spread about 1/2 cup of the chicken mixture over the cheese, then top with another 1.5 tablespoons of cheese. Fold the tortilla over to cover the filling. Cook until the cheese begins to melt and the bottom of the tortilla starts to brown, about 2-3 minutes. Flip the quesadilla and cook for another 2-3 minutes until the other side is browned and the cheese is fully melted. Remove from skillet and keep warm. Repeat with the remaining tortillas.

  3. Alternate Full-Size Quesadilla: If you prefer, you can spread the filling and cheese over the entire surface of one tortilla, place another tortilla on top, and cook as directed, flipping carefully. This method will yield 2 full-sized quesadillas; each serving will be half a quesadilla.
