Spinach, Chicken, and Strawberry Salad with Strawberry Vinaigrette

Ingredients
For the Salad:
4 cups fresh spinach leaves
2 grilled chicken breasts, sliced
1 cup fresh strawberries, sliced
1/2 cup walnuts, toasted
1/2 cup crumbled goat cheese
1/4 red onion, thinly sliced
For the Strawberry Vinaigrette:
1 cup strawberries with tops cut off
2 tablespoons apple cider vinegar
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
Instructions
Prepare the Strawberry Vinaigrette:
In a blender or food processor, combine the strawberries, apple cider vinegar, olive oil, salt, and pepper. Blend until smooth.
Refrigerate the dressing until ready to serve.
Assemble the Salad:
In a large salad bowl, add the fresh spinach leaves.
Top the spinach with sliced grilled chicken, fresh strawberries, toasted walnuts, crumbled goat cheese, and thinly sliced red onion.
Dress the Salad:
Just before serving, pour the strawberry vinaigrette over the salad.
