Spinach, Chicken, and Strawberry Salad with Strawberry Vinaigrette

Ingredients

For the Salad:

  • 4 cups fresh spinach leaves

  • 2 grilled chicken breasts, sliced

  • 1 cup fresh strawberries, sliced

  • 1/2 cup walnuts, toasted

  • 1/2 cup crumbled goat cheese

  • 1/4 red onion, thinly sliced

For the Strawberry Vinaigrette:

  • 1 cup strawberries with tops cut off

  • 2 tablespoons apple cider vinegar

  • 2 tablespoons olive oil

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

Instructions

  1. Prepare the Strawberry Vinaigrette:

    • In a blender or food processor, combine the strawberries, apple cider vinegar, olive oil, salt, and pepper. Blend until smooth.

    • Refrigerate the dressing until ready to serve.

  2. Assemble the Salad:

    • In a large salad bowl, add the fresh spinach leaves.

    • Top the spinach with sliced grilled chicken, fresh strawberries, toasted walnuts, crumbled goat cheese, and thinly sliced red onion.

  3. Dress the Salad:

    • Just before serving, pour the strawberry vinaigrette over the salad.

    • Toss gently to combine, ensuring all the ingredients are evenly coated with the dressing.

  4. Serve and Enjoy:

    • Divide the salad into four servings.

    • Enjoy immediately!
